Pearl Couscous with Curried Vegetables
Serves 3

2 tbsp extra virgin olive oil
1/2 brown onion, chopped
2 garlic cloves, finely chopped
1 tbsp finely grated ginger
1 tbsp mild curry powder
1 carrot, diced
1/2 capsicum, diced
10 beans, diced
about 1 cup diced pumpkin
1 pack Blu Gourmet Pearl Couscous
2 cups of boiling vegetable stock or water
salt and freshly ground black pepper
1/2 cup finely cut coriander leaves

Heat the olive oil in a saucepan and stir-fry the onion, garlic, ginger and curry powder for 2 minutes.  Add the diced carrot, capsicum, beans and pumpkin and stir for 2 minutes.

Add the couscous, stir well, then add the chicken stock.  Season with salt and pepper and bring to a simmer.  Cover with a lid and simmer for 8-10 minutes until done.  Stir once or twice during the cooking.

Sprinkle with cut coriander leaves and serve.
