Pearl Couscous with Chorizo and Goulash Spices
Serves 3
2 tbsp extra virgin olive oil
1/2 brown onion, finely chopped
2 chorizo sausages, cut into 1 cm pieces (or Hungarian salami)
1 small carrot, chopped
1/2 capsicum, diced
2 tsp Hungarian goulash spices
1 pack of Blu Gourmet Pearl Couscous
2 cups of boiling chicken stock or water
salt and freshly ground black pepper
1 tbsp grated lemon zest
Heat the olive oil in a pan and stir-fry the chopped onion for 1 minute. Add the chorizo, carrot and capsicum and stir for 1 minute.
Mix in the Hungarian goulash spices, then add the couscous and stir well. Add the boiling chicken stock and season with salt and pepper. Bring to a simmer,cover with a lid and simmer for 8-10 minutes until cooked. Stir once or twice during the cooking.
Just before serving, stir in the grated lemon zest.
