Pearl Couscous with Bacon and Egg
Serves 3


A popular quick meal that even be eaten for breakfast.  Served with a salad it makes a great Sunday evening dinner.

2 tbsp extra virgin olive oil
1/2 brown onion, finely chopped
3 rashers of bacon, diced
1 pack of Blue Gourmet Pearl Couscous
2 cups of boiling chicken stock or boiling water
salt and freshly ground black pepper
2 or 3 eggs
3 tbsp finely grated parmesan cheese or other cheese
2 tbsp finely chopped parsley, optional


Heat the oil in a pan and stir-fry the onion and bacon for 2 minutes.  Add the couscous, stir for 1 minute, then add the boiling chicken stock.  Season with salt and pepper and bring to a simmer.  Cover with a lid and cook on low heat for 8-10 minutes until just done.  Stir once or twice during the cooking.

When it is almost cooked, add the eggs, parmesan cheese and parsley and stir for
about 20 seconds.  Turn off the heat and wait a few minutes before serving.
