The bacon in this lovely dish is optional.  I enjoy this dish when I’m on my own as it’s easy and satisfying.


1/2 tbsp olive oil
1/4 onion, chopped
100 g sliced mushrooms
2/3 cup pearl couscous
1 cup chicken stock or other stock
salt and freshly ground black pepper
2 cups baby spinach leaves
2 tbsp grated parmesan
2 or 3 slices grilled bacon


Heat the olive oil in a small saucepan.  Stir in the onion and cook for a few minutes on medium heat.  Add the mushrooms, stir for 1 minute then add the couscous and stir well.  Add the hot stock and season with salt and pepper.  Bring to a simmer, cover with a lid and cook on low heat for 8-9 minutes.

Add the spinach and cook for a few minutes until the spinach has wilted.  Stir in the parmesan cheese, top with slices of grilled bacon and serve.  Bon appétit!
