1 cup of cooked or fresh chicken cut into cubes
1 carrot chopped
1 stalk of celery chopped
1 leek white part only, chopped
1 capsicum  chopped
1 packet of Gourmet Pearl Couscous
125 ml chicken stock
250ml boiling water
oil and 1 tsp butter
a small handful of Parmesan cheese

In a saucepan, fry chicken and vegetables in oil with 1 teaspoon butter till slightly tender.
Pour in couscous and stir to coat.
Pour in chicken stock and water to cover.
Bring up to a simmer and cook with lid on for 10 min.
Remove lid and put in a handful of parmesan cheese and stir.
