1 Cup Gourmet Pearl Couscous
2 cups chicken stock
1/2 bunch English spinach leaves, roughly chopped
1/4 red onion, finely diced
1/2 pomegranate Seeds removed from shell
1 lemon, halved
Olive oil
1/4 cup flaked almonds, toasted

Using a saucepan over medioum heat, add a tablespoon of oil and the Gourmet Pearl Couscous and cook for 1 minute.  Pour in the stock and simmer for approx 10 minutes or until the couscous is al dente.  Drain any excess liquid.  Transfer couscous to a large bowl.

Add fennel, spinach, red onion and pomegranate seeds to the couscous.  Season with salt and pepper.  Squeeze over the lemon juice and drizzle with olive oil.

Spoon into a bowl and top with toasted almonds to serve.
