This dish is popular with kids and vegetarians. I use broccoli but you can use other vegetables of your choice..
2 1/2 cups water
1 tbsp olive oil
250 g pearl couscous
2 cups Italian-style tomato sauce
1 clove of garlic, chopped
1/2 cup grated parmesan
salt and freshly ground black pepper
about 500 g broccoli flowerets, cooked
200 g grated mozzarella
1/2 cup dried breadcrumbs
Bring 2 1/2 cups water to the boil. Add 1 tbsp olive oil and stir in the couscous. Bring to a simmer, cover with a lid and cook for 10 minutes.
Stir in the tomato sauce, garlic and grated parmesan and season with salt and pepper.
Place the cooked broccoli flowerets in a greased oven dish and top with the couscous and sauce. Sprinkle the grated mozzarella on top then sprinkle with the breadcrumbs.
Place in a hot oven at about 200°C for 10-15 minutes until the cheese has melted and the top is golden brown.
