It’s easy to adapt the quantity of this great soup to suit the size of your family.

Ingredients:
2 tbsp olive oil
1/2 brown onion, diced
1 cup diced celery
1 medium carrot, diced
about 2 tbsp rosemary leaves
1 1/2 cups shredded cabbage
1 medium zucchini, diced
salt and freshly ground black pepper
1 tbsp tomato paste
2 cloves garlic, crushed
about 3/4 cup pearl couscous (or more if you wish)
a 400 g can of cooked cannelloni or borlotti beans, drained
1/2 cup grated parmesan
1/2 cup finely cut parsley


Heat the olive oil in a large saucepan on medium heat.  Stir in the diced onion, celery, carrot and rosemary and cook for a few minutes.  Add the shredded cabbage and the zucchini and season with salt and pepper.  Stir in the tomato paste and garlic.  Cover well with boiling water, return to the boil and cook for 10 minutes.

Add the pearl couscous, stir well and simmer for 8 minutes.  Then add the drained beans and simmer for 3 minutes.  Just before serving, stir in the grated parmesan and the parsley.
