2 tbsp extra virgin olive oil,
2 btsp chopped brown onion,
1 rasher of bacon, finely diced (optional),
1˝ cups chicken or vegetable stock or water,
1 cup Gourmet Pearl Couscous (about 160g),
1 cup green peas,
salt & freshly ground black pepper,
3 tbsp finely grated parmesan cheese,
1tsp butter (optional),
4 tbsp chopped parsley,
1 small clove of finely chopped garlic

Pour olive oil into a non-stick pan over medium heat.  Add chopped onion and bacon  and, while stirring, cook for 2-3 minutes without browning.
Add stock or water and bring to the boil. Stir in pearl couscous and seasonings.
Bring to a simmer, add peas, cover pan and cook for 8-10 minutes, adding a little boiling water from a kettle if a bit dry. When it’s cooked the stock will have been absorbed. Stir in the parmesan, the butter, the parsley and the garlic and serve.
