5 tbsp olive oil
2 tsp mustard seeds
1 1/2 tsp cumin seeds
2 tsp curry powder
2 tsp chilli paste
salt and freshly ground black pepper
8 chicken drumsticks
1/2 brown onion, finely chopped
1 red capsicum, diced
1 medium zucchini, diced
250 g Gourmet Pearl Couscous
1/2 tbsp tomato paste
2 cups chicken stock
a handful of coriander leaves
1 tbsp ground cumin
Preheat the oven to 200°C.
In a bowl mix 4 tbsp olive oil with the mustard seeds, cumin seeds, curry powder, chilli pastes and a little salt and pepper.
Place chicken drumsticks in a bowl and season with half of the spicy oil. Place chicken on an oven rack and bake in preheated oven for about 25 minutes, turning drumsticks from time to time.
Heat remaining 1 tbsp olive oil in a non-stick pan. Add onion and stir for
1 minute. Add capsicum and stir on medium heat for 3 minutes. Add zucchini and remaining spicy oil and stir well.
Add Pearl Couscous and stir well for 30 seconds before adding tomato paste and chicken stock. Bring to a simmer, cover with a lid and cook for 10 minutes on very low heat.
When the couscous is cooked, stir in the cumin.
Serve the chicken drumsticks on a bed of Pearl Couscous garnished with coriander leaves.
