COUSCOUS THE WHOLE FAMILY WILL LOVE Serve this simple pearl couscous dish as an accompaniment to fish.

1 1/2 cups water
1 cup of pearl couscous
4 tbsp olive oil
about 20 g butter
3 pieces of fish fillet of your choice, each about 150 g
juice of 1 lemon
freshly ground black pepper
1/4 red onion, finely diced
2 tomatoes, seeded and finely diced
1/2 cup of seeded and peeled cucumber, diced
2 tbsp finely cut dill

Bring 1 1/2 cups salted water to a simmer.  Stir in the couscous, cover with a lid and cook the couscous for 10 minutes.  Make sure all the water is absorbed.  Stir in 1 tbsp olive oil and the butter.
While the couscous is cooking, cook the fish fillets in an oiled non-stick pan for a few minutes on each side.
In a bowl mix the lemon juice with a little salt and pepper and the remaining olive oil.  Add the diced red onion and tomatoes, diced cucumber and the dill and mix well.
Serve a little couscous on three plates.  Top with a piece of fish, spoon a little salsa over the fish and serve immediately.
