Gabriel Gaté has created these wonderful Gourmet Pearl Couscous Recipes for you to enjoy! COUSCOUS THE WHOLE FAMILY WILL LOVE Ingredients (serves 3)
250 g pack of Blu pearl couscous
3 tbsp vegetable oil
approx 1 cup  bean shoots
1/2 brown onion, chopped
2 lean slices bacon, diced
1/2 tsp curry powder
1 cup cooked peas
2 tbsp soy sauce
1 tsp chilli paste
3 spring onions, finely sliced
handful of coriander leaves

Bring 2 litres of salted water to the boil in a medium saucepan.  Add the pearl couscous, stir briefly and cook on the boil for 10 minutes.  Drain the pearl couscous, cool under running water and drain well.   Mix the pearl couscous in a bowl with 1 tbsp oil.
Wash bean shoots and remove any damaged ones.
Heat the remaining oil in a wok or large, non-stick frypan.  Add onion and bacon and stir-fry gently for about 3 minutes or until the onion is transparent and just starting to brown around the edges.


Stir in the curry powder, then add the pearl couscous, peas and bean shoots, tossing on high heat until the pearl couscous is reheated.  Stir in soy sauce, chilli paste and slice
d spring onions. Sprinkle with coriander leaves and serve.


-Peel and dice avocado into small pieces.
