Microwave Pearl Couscous with Vegetables

Ingredients

Couscous base

  • a 250g packet of Blu pearl couscous
  • 2 tablespoon(s)s Olive Oil
  • a little salt and freshly ground black pepper
  • 1 teaspoon(s) curry powder
  • 1 teaspoon(s) sesame oil
  • 2 tablespoon(s)s soy sauce
  • 2 – 2 1/2 cup(s)s water or stock
  • 1 cup(s) diced carrots
  • 1 cup(s) shelled peas
  • coriander leaves for garnish

Directions

Place the pearl couscous in a large microwave container. Add the olive oil, salt, pepper, curry powder, sesame oil, soy sauce, stock, carrots and peas and stir gently. Cover loosely with a lid – the steam must be able to escape a bit – and microwave on high for 9 minutes.

Allow the dish to rest for 3 minutes before serving.
